Jackson-Triggs' Entourage Grand Reserve Brut from Niagara Peninsula is a refined, medium-bodied sparkling wine showcasing notes of green apple, brioche, Meyer lemon and hazelnut. This sparkling wine is made using Méthode Traditionnelle or the traditional method of the second fermentation in the bottle, just as they do in the Champagne region. The wine spends two years aging on its lees, developing remarkable complexity and a persistent, creamy mousse. Serve it well chilled with pan-seared scallops as the wine's bright acidity balances the sweet shellfish, or pair it with smoked salmon canapés where the wine's toasty character complements the smoky fish ...
